How do I avoid that the particles on a background get through teh text in foreground ?
By increasing the distance between the particles and the text.
Either by moving the text closer to the camera (with the TEXT POSITION property) or the particles further away (with the LAUNCH POSITION property)

You can achieve this by using positive Z-bias value in the bed of particles.
In the absence of texture particles (Presets Red Blobs.bp), this option will not appear. In addition, some presets, eg BixCircle.bp, this parameter can not perform. An example from the gallery - profidance.BT
