Nice textures. But I see some flashing on the globe as it turns, because of it's flat suraces. Is it possible to make the sphere smoother?

The flashing of the globe is caused by its specularity. You can turn this off by setting the SPECULARITY property of the globe (layer 4) to 0.
And you can make the globe more smooth by setting the render quality to high. You can do this with the menu item SETTING / HIGH QUALITY

The flashing on the globe looks like a mistake to me. BTW what exactly does "specularity" mean? I read the description in the user's guide but it didn't help me understand any better.

Nice font (Black and Gold) but the globe definitely has a conical appearance at the top even in High Quality mode, it disappears if you rotate the earth back a little. Is this a bug?
The Specularity doesn't quite work because of the flashing effect and the earth map lets it down a little as you can see the join!

The SPECULARITY property controls the shininess of the material. The bigger this value, the bigger the highlights.

You can create twinkling stars with the particle layer.
Select the menu item LAYER / ADD PARTICLE LAYER and choose the TWINKLING STARS preset.
You can move the particle layer to the right position (not in front, but behind the earth) with the LAUNCH POSITION property. You can make the stars pop up all over the screen by adjusting the LAUNCH AREA property to something like (400,400,0). And you can make the stars bigger with the SIZE property.

I'm experimenting with changing text and colour. But somehow I've introduced 'stripes' on the globe and I cannot work out how to remove them.

This looks like you have made a copy of the world (cloned the layer) and have rotated one of them. If this is true deleting one of them will solve the problem.

I found out the cause thanks. (The keys for earth.jpg and earth_night.jpg were out of sync.)
But I have another question please. How would I customise the starting and ending globe positions? I want to arrange the finish so that the text is nicely centred and the globe in a position of my choice.

When you say positions I assume you mean rotations.
You can do this by editing the ROTATION properties of the keyframes.
