I'm obviously missing something but I can't work out how to select landscape files in another directory. When I try to add a Landscape layer it always defaults to the same directory. Is there a way I can select another directory, or do I need to copy the files to the default landscapes directory?
A landscape layer typically uses 2 textures: a colour map and a displacement map. Both can be placed anywhere you like: in any folder on any drive. There is no "default landscape directory".
Select the landscape layer and choose MEDIA > CHANGE TEXTURES... to see and change the textures.

Hi Michiel,
What I was referring to is in the attached image. When I select Add Layer/Add Landscape Layer, I get the dialog shown in the attached image. There doesn't seem to be a way to navigate to another directory.
So is the process to just add the landscape layer without selecting a file, and then change the textures?

That's a preset. This dialog is also presented when you add, for example, a plasma layer.
Presets have to be stored in the Presets folder. The app gives a warning when you try to save your preset in another folder with the PRESET > SAVE PRESET AS.... menu item.
So yes, select a preset, or click on the DEFAULT button, and change the textures and other things afterwards.

To create new landscapes, I open a landscape layer with the colormap you presented above. Then I change the colormap and its associated displacementmap to the ones I chose.
Note that they can also be called “Diffuse” and “Heightmap” respectively. Sometimes you can even use a different displacementmap, which sometimes gives surprising effects!
